Tasting notes: Dried rose petals on the nose, fresh harvested strawberries and cherries.
Production notes: Uses Pommard and Dijon clones. Picked in the morning and slow destemmed and cold soaked for 3 days. Pump over 3 times daily in stainless steel tanks for initial fermentation then reduced to one pump for the duration. Aged in neutral french oak barrels for 7 months. Organic Demeter certified & Biodynamic.
